The best thing you can do to keep your knives sharp and to prevent wear on the edge of the blade is in use to ensure proper cutting surface. The polished steel is not a grinder, but is used to re-align and straighten the edge of the blade. By pulling the knife's edge along the length of burnished steel, the blade may be returned to the correct angle. Manufacturers recommend using a honing steel every time you work with knives.
As far as sharpening their knives, a variety of knife sharpeners home on the market today and many of them do a good job within a reasonable margin return to their sharp blades. The manual sharpeners are much less expensive than their electric counterparts, but do not seem able to handle a blade which is pretty boring. If you keep up with their knives and the leaves are only slightly deaf, the manual sharpener is probably fine for you. Otherwise, you'll probably want to invest in a sharpener electric. When buying a knife sharpener electric, you may want to consider getting one that includes a non-motorized slot that can be used as a burnished steel. This will save you having to buy the steel, and sharpeners. Moreover, the mechanism of honing in the electric pencil sharpener is much easier to use than traditional honing steel.
The other option for sharpening knives is taking them to a professional knife sharpener. This election is certainly less desirable for the implementation of the road through a grinder at home, but nothing can give their leaves a sharper edge to an experienced professional can. In fact, many professional chefs say their knives sharpened by a professional sharpener is the only way to go.
